Banana Cookies OR What to do with over ripe Banana's

Classic Banana Cookies

INGREDIENTS

2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
2/3 cup butter or 2/3 cup margarine, softened
2 eggs
2 bananas, mashed
1 teaspoon vanilla

DIRECTIONS

1. Preheat oven to 400 degrees.
2. Combine flour, baking powder, salt and sugar in a large bowl. Mix well.
3. Add butter or margarine. Mix well.
4. Add remaining ingredients. Mix well.
5. Drop by teaspoonfuls on cookie sheet.
6. Bake in preheated oven 12 minutes.

My wife makes great Banana Ice Lollies!

Put bananas into blender with dollops of Coconut Cream &Yoghurt plus Kalhua liqueur to taste!

Blend!

Pour into preferred Ice Lolly moulds....FREEZE

Lovely on a hot Cyprus afternoon after a siesta!
