Luis Cañas Reserva is a red wine produced by Luis Cañas, in the D.O Rioja.<br /><br />The winery Luis Cañas is a family run business located in Villabuena (La Rioja Alavesa). The family has been producing wines since the 20th century.<br /><br />Luis Cañas Reserva is produced from the variety Tempranillo (95%) and Graciano (5%).<br /><br />The grapes originate from old vines, aged between 50-60 years old, low yielding vines.<br /><br />The harvest is performed using small 15kg capacity boxes, once at the winery the grapes undergo a double selection process: bunches and grapes.<br /><br />For production, the fermentation process is completed in wooden vats, the malolactic fermentation is achieved through new French (70%) and American (30%) oak barrels.<br /><br />Luis Cañas Reserva is aged in the same barrels for 24 months. To be honest, I did keep a few different wines from Barossa Valley and wolf Blass winery was one but they proved a little too expensive for our market place, it's possible I have a couple left but ill have to check.

I'll try to remember to add the ABV when I post new wines in the future but the majority of our wines range from 12.5 % too 16% reds. We may even have a 16.5% Red from memory ((W\)) Sorry no 1Lt Cointreau in stock, we only sell what we import ourself and never been asked for it before and do not stock anything from any other suppliers within TRNC

Chilean Sauvignon Blanc
Chile is known for making some of the most popular Sauvignon Blanc in the world. The wines are light, refreshing, citrusy and enjoyable.

Often more affordable, Chilean Sauvignon Blancs are not as pungent as New Zealand Sauvignon Blancs, and a little fruitier than French Sancerre, also made from this grape.

Sauvignon Blanc can have a wide range of flavours, but it is known for its green flavours, which some people love and other people hate. These flavours can be like freshly cut grass, green peppers, or herbs.

The Sauvignon Blancs from Chile do not have as many of those green flavours and instead are more citrus-forward. You are more likely to have a wine that is filled with delicious grapefruit, passionfruit, or lime flavours. The wines are typically simple but enjoyable.

Look for Sauvignon Blancs from the Aconcagua Valley or the Casablanca Valley for some really great examples.

The Drink Of Vikings !

Honey is used in a small number of alcoholic beverages, either as a base ingredient or a sweetening flavour enhancer. Until the discovery of cane sugar, honey was one of the very few sweeteners available and was considered an indulgent luxury. Only the rich and powerful could spare honey for use in the production of beer and wine, and even then it was used primarily to improve the flavour of weak ales.

Mead is the most prominent example of a product fermented from honey. The honey is first mixed with water and sometimes grain mash (from which it is separated following fermentation) and the resulting liquid is then allowed to ferment. The alcoholic strength of mead varies from 8-17 per cent ABV, unless fortified with grape spirit or grain spirit. Regional variants of mead exist in several localities around the world, such as Hydromel in France, Honigwein in Germany and Toaka in Madagascar. Mead which has been aromatized with herbs and/or spices is known as Metheglin. The most common additions to Metheglin are lavender, thyme, mint, cloves, cinnamon and ginger.

Honey
Honey, the essence of mead
It is widely (mistakenly) thought that mead was invented in the monasteries of medieval Europe. In fact, the original versions were made by the ancient Greeks and Egyptians several thousand years earlier.

A natural and relatively accessible product, honey provided an obvious base for mankind’s first experiments with fermentation, and almost certainly predates grapes and grain as ingredients in alcoholic beverages.

It is likely that the first mead was made accidentally rather than deliberately, perhaps the by-product of a moist honey pot left out in the sunshine.

Like wine, mead has strong religious associations, although rather than being directly sanctioned by God, it was the by-product of work carried out in his name. In the Dark Ages, monasteries were a symbol of light, in both real and metaphorical senses – not only were they centres of learning and enlightenment, but they were also one of the few places where candles were a requirement rather than a luxury. Beehives kept as a source of beeswax inevitably also provided honey for the table, although the production ratio of wax to honey meant there was often more honey than required. It was this surplus that was turned into mead.

For centuries, mead was made and consumed in monasteries all over Europe. Those blessed with suitable terroir (particularly in Burgundy) also made wine, and the Cistercian monks of northwestern Europe also made their famous Trappist beers, the early forms of which may well have included honey.

Honey liqueurs are quite distinct from mead and are most often made from a grain-spirit base sweetened with honey.

The main ingredient of mead being honey, it is believed to possess a variety of benefits as it comprises of more than 180 substances which include minerals, enzymes, vitamins, antitoxic, and sugars. It also contains pollen which contains more proteins essential for good health than beef.

Mead (”Old English: medu, meodu”), (Old Norse mjöð), (”Danish: Mjød”) is an alcoholic beverage made by fermenting honey, water, and yeast, and if you want more flavours, you can just add different herbs, fruits, grains or spices, so you can tweak it to your liking.

Mead, is a drink for the gods, is mentioned in Greek myths as well as Norse mythology where the god Odin was said to have gained his strength because he drank mead as a suckling baby. Vikings also believed that when they died honourable deaths and reached Valhalla, they would be rewarded with mead.

Marsala wine has a unique taste for two reasons: the use of only Sicilian indigenous grapes and a complex winemaking process. Making Marsala wine is actually pretty difficulte:<br /><br />Marsala is fortified with brandy or neutral grape spirit usually made with regional grapes.<br />A cooked grape must called ‘Mosto Cotto’ gives Amber Marsala its deep brown color.<br />A sweetened fortified wine called ‘Mistella’ is often blended, made from Grillo grapes.<br />High-end Marsala wines employ a special aging system called Soleras.

These are the only Ports that use different grape types than all the other Ports mentioned. They range in sweetness levels from very dry to very sweet (called Lagrima Port). Typically, they are relatively inexpensive and are used as an aperitif or mixed with tonic and lemon into a drink called “Port Tonic.” The latter is a very refreshing drink on a warm summer day. There are also some rare bottles of White Colheita’s that exist, but these are very hard if not impossible to find.<br /><br />White Port or “Porto Branco” in Portuguese is an uncommon category of Port but a great place to start. I have enjoyed this style of Porto from the first time I had it at Quinta do Bomfim. Most often served as a chilled aperitif; unfortunately they’re rarely appreciated or promoted in the US marketplace.<br /><br />White Port is made from white grapes of which a few dozen varieties qualify for the final blend. There are nearly as many white varieties grown in the Douro as red grape types. Some of the more widely used white grapes are: Moscatel, Malvasia Fina and Gouveio (a.k.a. Verdelho, which is also used in Madeira production as is Malvasia), Rabigato, and the prolific Codega (the most widely planted white grape in the Douro) to name a few more esoteric ones. White Port is fortified like all other styles of Porto, but vinified like a tawny and aged for a year in huge oak tanks before further aging in “Pipes” (550 liter oak casks) prior to bottling. The wines range in color from that of a pale straw Chardonnay to a beautiful salmon color seen frequently in Rose, to those aged for extended periods in wood that resemble the appearance of ancient Tawnies.<br /><br />There are a few distinct styles of White Porto, which are segregated by the degree of sweetness levels, and they can be either sweet or dry, or somewhere in between. Another point of differentiation is the length of aging time.<br /><br />The Light Dry White Porto is known as “Leve Seco” which has a lower alcohol content of 16.5% and ages in oak between 5 – 10 years and gains complexity like a Sherry or Tawny Port while losing its residual sugar as it ages.<br />The medium sweet White Porto ages in wood for at least 3 years and shows more color definition and body than Leve Seco.<br /><br />The sweetest White Porto is known as “Lágrima” and is very delicious. I have only seen and tasted Lágrima in Portugal and the Portuguese seem to like this sweet style very much and it is widely available there, but not found easily elsewhere in the world. Oak aging is between 3 - 5 years and the wine is produced utilizing free run juice from a variety of white grapes. This sweet style is very different and can double as a dessert wine as it pairs well with a variety of cheeses. I only wish it were exported to the USA as I have only seen it here once and that was a recent tasting of Barros.<br /><br />My favorite White Ports in order of preference: Churchill, Niepoort, Ferreira’s Lágrima and Dow. Seek out any of these wines for unique flavor profiles, not to mention great wines to sip during hot summer months. Another great way to enjoy White Port is in a Port Tonic, as described above.
These are the only Ports that use different grape types than all the other Ports mentioned. They range in sweetness levels from very dry to very sweet (called Lagrima Port). Typically, they are relatively inexpensive and are used as an aperitif or mixed with tonic and lemon into a drink called “Port Tonic.” The latter is a very refreshing drink on a warm summer day. There are also some rare bottles of White Colheita’s that exist, but these are very hard if not impossible to find.

White Port or “Porto Branco” in Portuguese is an uncommon category of Port but a great place to start. I have enjoyed this style of Porto from the first time I had it at Quinta do Bomfim. Most often served as a chilled aperitif; unfortunately they’re rarely appreciated or promoted in the US marketplace.

White Port is made from white grapes of which a few dozen varieties qualify for the final blend. There are nearly as many white varieties grown in the Douro as red grape types. Some of the more widely used white grapes are: Moscatel, Malvasia Fina and Gouveio (a.k.a. Verdelho, which is also used in Madeira production as is Malvasia), Rabigato, and the prolific Codega (the most widely planted white grape in the Douro) to name a few more esoteric ones. White Port is fortified like all other styles of Porto, but vinified like a tawny and aged for a year in huge oak tanks before further aging in “Pipes” (550 liter oak casks) prior to bottling. The wines range in color from that of a pale straw Chardonnay to a beautiful salmon color seen frequently in Rose, to those aged for extended periods in wood that resemble the appearance of ancient Tawnies.

There are a few distinct styles of White Porto, which are segregated by the degree of sweetness levels, and they can be either sweet or dry, or somewhere in between. Another point of differentiation is the length of aging time.

The Light Dry White Porto is known as “Leve Seco” which has a lower alcohol content of 16.5% and ages in oak between 5 – 10 years and gains complexity like a Sherry or Tawny Port while losing its residual sugar as it ages.
The medium sweet White Porto ages in wood for at least 3 years and shows more color definition and body than Leve Seco.

The sweetest White Porto is known as “Lágrima” and is very delicious. I have only seen and tasted Lágrima in Portugal and the Portuguese seem to like this sweet style very much and it is widely available there, but not found easily elsewhere in the world. Oak aging is between 3 - 5 years and the wine is produced utilizing free run juice from a variety of white grapes. This sweet style is very different and can double as a dessert wine as it pairs well with a variety of cheeses. I only wish it were exported to the USA as I have only seen it here once and that was a recent tasting of Barros.

My favorite White Ports in order of preference: Churchill, Niepoort, Ferreira’s Lágrima and Dow. Seek out any of these wines for unique flavor profiles, not to mention great wines to sip during hot summer months. Another great way to enjoy White Port is in a Port Tonic, as described above.
Cream is a semi sweet wine which is obtained exclusively from oxidative ageing and involves blending the Oloroso (in what is known as cabeceo) with an amount of Pedro Ximénez, hence it being commonly known as Sweet Oloroso. <br /><br />Tasting Notes<br />Ranging from chestnut brown to dark mahogany in colour this wine has a dense, syrupy appearance. A strong oloroso bouquet in the nose combines with a hint of sweetness reminiscent of roasted nuts, such as in nougat or caramel. Full bodied and velvety in the mouth with a well-balanced sweetness, seductively elegant with a lingering aftertaste combining hints of sweetness with the characteristics traits of an oloroso.<br /><br />Did You Know?<br />The intensity of this wine and its concentration of sweetness allow it to be served “on the rocks” while it continues to show its aromatic power and length on the palate.
