Making mustard for the first time

When our neighbours Hürü and Temel harvested their wheat( 2 whole trailers full!!) it had lots of mustard seeds in it. They spent ages sifting it all out, sold the Wheat for a nice price as their stuff is all truly organic ( hence the mustard seeds). They save several kilos for the kitchen but the rest gets mixed into the barley and the sheep like it. Hürü makes all her own stuff, including mustard!!
She offered me some seeds and I started making mustard today - a first for me. I looked up German and English recipes - not so different other than added flavours. Mixed the seeds with vinegar, white wine and various spices and flavourings and now resting in the fridge for a couple of days. It has to be cold otherwise you loose some of the 'hotness'. I had no idea that it is turmeric that makes it yellow!! Will report further soon

Here is the picture of my first batch , quite hot wholegrain, definitely worth making. I will make some and different recipes. It looses it's hotness after a while so won't be rushing to make lots, but every time we are running low - or I want a present for somebody - I will make another batch - will grind some seeds in my old coffee grinder to make a smooth one as well.

Herbicides can be used to control it, but in an organic crop, such as is grown by dippersgirl's neighbours, you can get quite a lot!

I have looked for mustard seeds here, but haven't seen any.

I may just take you up on that Dippersgirl, or rather your neighbour. Will give you a shout next time am heading along your way. Might fit it in with a trip to a market out that way. Can you tell me what days they are on please for future planning? Usually go to Iskele on a Friday, but would be nice to have a wee change.
