Hasselbank potatoes with chopped bacon + tomatoes stuffed with blue cheese

Hasselback potatoes, the Swedish method of baking potatoes, also known as ridgeback or hasselbaink potatoes.
Hasselbacks need to be cut almost all the way down to fan out the slices. :+1:)
