The one that I can recomment that is funcioning at the moment is:
Paradise Karpaz:

you can also see them on FB

We haven't actually slept there (we lived in Dipkarpaz!), but our friends from Nicosia use it regularly and we used to go and meet them there for dinner. I have looked at the rooms and they look very nice.
Saw this today on FB:
Our winter campaign.
1100 tl per day including breakfast for two persons.
Our restaurant is always in service. Don’t leave without tasting our unique Sibya dolma, fish, kebabs and stew varieties.

Re: Karpaz hotels
We have stayed at Paradise Karpas.
Nice taverna, good clean rooms and nice beach area.
Also stayed at Seabird which is only 1km from the monastery. Basic rooms, taverna, good food and a great beach.
Can also recommend looking in Dipkarpaz village as there are some nice places in the village to stay although it is a drive to the monastery. Burhans Place just outside Dipkarpaz village on the way to the Karpas is more upmarket and as close to a boutique hotel as you will find. Nice rooms, lovely pool plus of course a restaurant.
Have stayed at all of the above and whilst they are different we have always had a good stay.
