Lemon Coconut Cake
Ingredients
• 1 1/2 cups self-raising flour
• 1/2 cup desiccated coconut
• 1 tbs lemon rind grated
• 1 cup caster sugar
• 125 g butter melted
• 2 eggs
• 1 cup milk
Method
1. Preheat the oven to 180C. Grease a 20 cm deep round cake tin.
2. Combine all ingredients into a bowl, mixing well with wooden spoon until batter is smooth.
3. Pour the mixture into cake tin and bake 40 minutes.

Used 1/2 ingredients and 8 inch pan in an AirFryer for 10 mins on 180 c then 5mins on 140c. works great. Dizzle with lemon iceing. PS ALL gone know Ha ha
