2 cloves of Garlic
1 tea spoon of Minced ginger or equivalent of fresh.
1/2 tea spoon of ground turmeric
1/2 tea spoon of ground salt
1/2 tea spoon of Cayenne pepper
2 tea spoons of ground paprika flakes
3 table spoons of sultanas
6 fl oz of cider vinegar
7 oz of white granulated sugar
1 large green mango
1) Mix garlic, ginger, paprika flakes, turmeric and a splash of the vinegar into a paste.
2) Put paste , mango chunks (these should be chopped into about 1 cm cubes, to reduce cooking time), sultanas, sugar and the rest of the vinegar, into a pot, bring to the boil then simmer for about 30 mins or less depends on the heat, but let the mix thicken. Pour into clean jar to cool, makes about two 1lb jars of Mango chutney.
