Beetroot and Feta Burgers

BEETROOT & FETA BURGERS
These beetroot & feta patties combine sweet and earthy beetroot with creamy salty feta. Served in rolls with slow-cooked sweet onions, a piquant mayonnaise and potato wedges.

Ingredients for 2
2 burger rolls
250g cooked beetroot
1 british free range egg
100g feta
2 garlic cloves
mayonnaise
1 red onion
A good pinch of dill tips
30g breadcrumbs
400g potatoes
Flour, pepper, salt, rapeseed oil.

Preheat the oven to 220°C/ 200°C (fan)
Cut the potatoes (skins on) into wedges, put them on a baking tray, drizzle with rapeseed oil and season with salt and pepper. Put them in the oven for 20-25 min or until golden and crispy
Meanwhile, drain and grate the beetroot into a colander over a bowl, then press to release any excess juice (reserve the juice as you will use this later)
Tip: try to squeeze as much juice out as you can, this will help the burgers stick together
Peel and mince the garlic (use half in the patties and half in the mayonnaise later).
Pat the feta dry with kitchen paper and break it up into small pieces
Peel and slice the red onion finely
Combine the grated beetroot, garlic, feta, breadcrumbs, egg and 2 tbsp flour in a large bowl and season with salt and pepper
Heat a wide-based pan (preferably non-stick) with 1-2 tbsp rapeseed oil over a medium-high heat.
Once hot, add the onion with a pinch of salt and cook for 5 min or until slightly softened.
Reduce the heat to medium-low, add the beetroot juice and cook for a further 5 min.
Once the onions are cooked, transfer them to a dish, wipe the pan clean and reserve it for later.
Divide the beetroot mixture into 4 and shape into balls.
Flatten each ball to make beetroot patties.
Return the reserved pan to a medium-high heat with 1-2 tbsp rapeseed oil.
Once hot, add the beetroot patties to the pan one by one and cook for 3-4 min on each side.
Meanwhile, combine the mayonnaise, dill tips and season with salt and pepper.
Toast the buns and then assemble* the burgers with the mayonnaise and onions and serve e potato wedges to the side.
* Tip: Add sliced tomatoes, tomato sauce, rocket and sliced gherkin to the burgers if desired

Sounds right up my street. Thanks Groucho, will try this out, but will substitute with a Cypriot egg.
