SOUPS

BROCCOLI AND STILTON SOUP

2 tablespoons oil
1 onion chopped
1 stick celery chopped
1 leek chopped (yuck, yuck, yuck I leave that out)
1 medium potato chopped
1 litre chicken stock
1 head of broccoli chopped
garlic to taste
knob of butter


140g stilton (or blue cheese as available)

Heat the oil, add the onions
Addd the celery, potato. Garlic and leek (if you must) with a knob of butter. Cover and leave tp sweat on low for 5 mins.

Pour in the stock and add broccoli. Cook till soft. Blitz. Till smooth.

Crumble stilton stir in. Season with black pepper

Enjoy

Can I make this without a soupmaker , will a normal sauce pan suffice ??

I made veg soup today, carrots, Swede, onion, leek, celery, cabbage, broccoli, cauliflower, sprinkle of dried mixed herbs, 3 veg oxo cubes, salt and pepper boiled up in a pan then mashed with a potato masher left it a little chunky. Enough for 2 for 3 days. You can add barley and chicken to make chicken broth.

Yes of course it can be made without a soup maker. I tend to use a hand blender (because it saves getting the food processor dirty). I generally make a large portion and freeze some.
I would say that my base soup concoction is as broccoli soup, maybe I have some broccoli stalks I throw in, a few carrots or whatever veg is in the bottom of the fridge plus a tin or 2 of tomatoes (fresh if I am in Cyprus).

Thank you for the recipe. Keep posting such recipes. I really loved the soup recipe and will soon try it.
