First time made this did not boil the ingredients and we had it on salad super,

I recently did a batch that I did cook , wicked posh chutney. Enjoy

Tomato Chutney / Salsa
(Better Known as Mike’s Cockup)

1 kg (2 ¼ lb) Ripe tomatoes, roughly chopped
1 large onion , finely chopped ( I used red onion)
3 garlic cloves finely chopped
150 ml (1/4 pint) white wine vinegar
200 g (7 oz) light brown sugar
1 teaspoon of salt
½ teaspoon dried chilli flakes
4 cardamom pods cracked
¼ teaspoon ground cinnamon

1. Place all the ingredients on a large pan, Bring to the boil and simmer for 60 mins, stirring frequently until thickened and pulpy.
2. Remove from heat and stir occasionally until cool, then pour into a clean jar and allow to cool completely.
